Mac oh geez!

It’s been a pretty overcast kind of day. Grey sky and naked trees, we’re one step closer to winter. I love the snow globe look of winter, but I’m not ready to let go of summer yet.

So, tonight I’m reaching for some comfort food. Not processed crap- but something really yummy and easy. If you can boil noodles and blend some ingredients- you have something healthful.

I don’t know if you know who Dreena Burton is, but you should. She’s the author of several cookbooks, and has a blog (which will be posted further down). The book I’m going to be talking about this evening as my dinner cooks is Let Them Eat Vegan. I’ve made several of the recipes in it and they are all fantastic. One of my favourite dishes is Mac oh geez, which can be found in page 164.


The recipe can be made nut and oil free. There is a list of ingredients- but I promise it’s very quick to put together. I love this dish with brocoli- but I don’t have any- so corn and peas it is 🙂


This dish takes about 20 mins give or take to bake. I don’t add bread crumbs (just because I’m not a fan of them on pasta). Use any veggie (or leave it veggie free, and just have a side veggie) you like in this dish, just blanch the veggies in with  the cooking pasta for a minute or two – just remember they will continue to cook in the oven, just like the pasta will. Serve with smoked paprika for a little something extra. But it’s excellent without it.
