Today’s lunch:

Greenleaf lettuce, tomatoes, mushrooms, red/green/orange/yellow bell peppers.  Salad dressing:  1tsp evoo, drop/two of coconut oil, chopped garlic, pinch salt, dash or three black pepper, drop/two Worcestershire (<— aren’t you impressed I can spell that? 😉 ) sauce.

Hi Anna, you can always do a heartier salad i.e. add lentils, avocado, roasted chickpeas, slivered almonds, peanuts, sunflower seeds, etc. You can also put your salad in a wrap or use a Romaine lettuce leaf and fill with the salad or blanch a collard green leaf and fill it with whatever you desire. You could also pair any of this with a hearty fresh juice:
