Roasted Cauliflower and Green Pea Soup

With the weather being colder, it is a great time for soup, all the soup. I have borrowed a copy of Vegan- Ease by Laura Theodore. I have booked marked almost every page of book- all of them are must make recipes, I had some cauliflower in the fridge that needed to be used up and a bag of peas in the freezer- BOOM! Dinner planned.

This recipe does come together fairly quickly and easily. If you didn’t have time to roast the veggies before hand, you can roast them the night before.  Then you throw everything into the blender- I have a vitamix so I can heat my soup up using that- skipping the stove top heat up method.



Look at that beautiful green color! It’s perfect! Great color, awesome taste- and such an ease factor. I highly suggest making this. Left overs will be garnished with a little bit of smoked paprika! Yummy!!!!
